1 inch by 3 inch fruits on 3 inch plants. Ripen to light green to yellow to light reddish-orange. Hot citrus flavor is best when immature. An interesting little pepper with black seeds. Perfect for a spicy salsa. Thick flesh is not great for drying. Use for stuffing and for making classic mole. Often dried. The Santa Fe Grande has a slightly sweet taste with a medium hot to hot pungency which is just what you want in your salsa. We like them in Sauce Vera Cruz!

Also called California chile or Magdalena. This chile is used in many Mexican and New Mexican dishes. Great stuffers! Dark green fruit 3 inches wide by 4 inches long. Also known as Poblano and Pasilla. Used for stuffing and sauces. Fruit turns to red when ripe. Often dried and ground for powder. Great for containers. 10-12 inch plants, purple and green foliage, fruits upright 1-1/2 long. Ripens lavender to deep purple to orange and then red. Very ornamental and useful in kitchen. Green foliage with purple veins and flowers. 30-36 inches tall with 3-4 inch fruits. Shiny black fruit ripening to red.

18 inch tall plants. Ripens from green to yellow-orange. Adds color and crunchy texture to chutneys and salsas. Good for roasting. Ornamental 12-16 inch plants. Covered with 1 inch long fruits in clusters of 4-6. Ripens from green to yellow to orange to bright red. The cayenne type chili is plenty hot, often dried to make Ristras. Used to make sharp flavored red chile sauces or ground into a dry powder. Nice hot and smoky flavor. Long golden-yellow fruits, originally from central Africa. Citrus flavor. Good choice for pots. Bright, crunchy with a bold flavor makes them great for medium salsas. Fruit 2 inch long, green turning chocolate brown when ripe with a fruity smoky flavor. A chile lover's chile! Productive 32 inch plants, originally from the Caribbean. To be taken seriously! Fruit ripens to red, 3 inches long by ½ inch wide. Earlier and more productive in the North than the regular habanero. Very productive.

Great habanero for pots, compact 16-18 inch plants are loaded with peach-colored fruits. Heat: Hot Typically picked green but ripens to red. Adds a zesty true jalapeno flavor to your salsas and spiced up dishes. Good in cooler climate! Used in Szechwan dishes. Upright fruit on plants 2 feet tall. Fruit ripens to red and is 2 inches long by ¼ inch wide. Clusters of 6-8 pods. Heavy sets of finger-thick 10-12 inch peppers. Great for fresh eating or drying for ristras or hot pepper flakes. It's bright red color makes them an excellent choice for sauces or in stir-fries and fresh in salads.

6-10 inch cayenne type pepper. Excellent for hot sauces and dried pepper flakes. Ripen to bright red. Plants can be dug up and over-wintered. A very pungent flavor with a bit of smokiness. Great pickled. Great as small potted holiday gifts. Ripe fruit will hold well for weeks. Edible but hot. Ornamental and useful. Plants are 4 feet tall by 3 feet wide with small fruit ½ inch long by ¼ inch wide. Fruit held upright. Usually dried and smoked. Related to the wild form called Tepin/Chiltepin. This pepper is one of the hottest of the large-fruited peppers. Short growing season, great for roasting and stuffing. Rare pepper from Virgil T. Ainsworth of Laurel, MS, used in his famous sausage. Plants at least 1 foot tall by 2 feet wide. Fruit yellow-orange and 1 ½ inches long by 1 ¼ inches wide; shaped like the orange habanero.

Plant 2 feet tall by 2 feet wide; fruit 1 ½ inches long by 1 ¼ inches wide. Ripens to bright scarlet red with round to habanero shape. Popular pepper for salsa and guacamole. About twice the heat of a jalapeno. Prolific and early maturing fruit 2 inches long by 1 inch wide. This pepper is good to eat fresh, pickle or use as a garnish. Plant 3 ½ feet tall by 2 ½ feet wide with upright habit. Fruit turns from light green to orange to bright red and is 1 inch long by ¼ inch wide standing upright on the plant above the level of the leaves. Great for hot sauce. Round fruit only ¼ inch wide growing on perennial plants 3 feet tall by 4 feet wide. Fruit best in second year. Fruit ripens from purple to green to orange to red and fall from plant when ripe. Taste is fiery at first, fading to a fine pepper flavor. Great pepper to grow in pots or in the garden. Loaded with ½ inch fruits. Ripen from green to red, averages 200 fruits per plant. Dry, crush and gring into an intense paprika. Great to grow in containers. Small upright fruit, ¾ inch long by ¼ inch wide, ripen from purple to yellow to orange to red. Harvest when red for salsa or hot sauce.
